Anyone craving something sweet, spicy, salty, and the struggle is overwhelming?  I will devour bags of chips, pretzels, peanut butter cups dusted with sea salt, or pounds of chicken wings to satisfy it.  Peach bourbon chicken wings were born out of necessity to help with said struggle!

These wings are coated with a sticky, sweet, and spicy glaze that has a hint of salt in it too.  Throw in the bourbon and the peaches and you have the perfect way to satisfy your cravings and mine.

My husband loves bourbon.  He started collecting rare bottles two years ago and I played into it by buying him a “bourbon of the month club” delivery service for Christmas two years ago.  That was an exciting time for him.  Watching his anticipation when the packages came in the mail.  Pardon the cliche but it was like Christmas morning the 20th of every month.

I have tried to get into drinking bourbon but to me, the flavor is very strong.  Mixing it with some fruit always seem to help control the strength and makes it to where I can enjoy drinking bourbon with my hubby.  

My favorite mixer is a raspberry ginger ale.  I know it seems strange to think of the two together, but if you haven’t tried it before, give it a shot.  Or two or three shots if you are feeling frisky.

How do I get the chicken wings so crispy in the oven?

For these wings, you might need a few things.  These baking pans are the bomb and all I use.  If you really want the wings crispy I recommend cooking them on this rack inside the baking pan.  Don’t forget your baking powder!

That fresh fruit influence I was just rambling about, inspired me to add fresh peaches along with the peach preserves to the glaze.  Georgia has great peaches and we are right in the middle of the season right now.  

If you love eating those ripe peaches and letting the juice drip run down your hand then you will love these wings.  Of course, the glaze doesn’t run as fast as fresh peach juice but you will still want to like your fingers, and part of your forearm when you get done with these wings.

Don’t worry, they are not all sweet.  The serrano peppers I popped in there will kick in some heat to offset the sweet and make them well-rounded.  Just like my cravings for sweet, salty, crunchy, spicy, and just any kind of food in general.

Ingredients

Chicken Wings

  • 1 pound chicken wings
  • 2 tablespoons baking powder

Peach Bourbon Sauce

  • 1 cup peach preserves
  • 1 ripe peach peeled, diced
  • 2 serrano peppers seeded, diced small
  • 1 teaspoon salt
  • 1/4 cup bourbon
  • 2 tablespoons brown sugar

Instructions

Prepare the chicken wings

  • Trim and dry your wings. Leave them uncovered in your fridge overnight for best results!
  • Place them in a zip-top bag and add your baking powder.
  • Shake to cover the wings.

Bake the chicken wings

  • Preheat oven to 250F.
  • Place wings in a single layer on a baking sheet with a cooling rack on it.
  • Bake in the lower third of your oven for 30 minutes.
  • Raise the temperature to 450F and move your wings into the top third of your oven.
  • Bake for another 40-50 minutes or until they are crispy enough for you.
  • Remove from oven.

Make the Peach Bourbon glaze

  • In a small saucepan, add the peach preserves, bourbon, and brown sugar.
  • Stir to combine and dissolve the sugar.
  • Add the serrano peppers, salt, and fresh peaches.
  • Bring to a boil and boil for 2 minutes.
  • Remove from the heat and let cool down. The sauce will thicken as it cools.
  • Toss chicken wings in the glaze and eat.
