Pineapple Cucumber Rum Punch
This bright and refreshing pineapple cucumber rum punch is the perfect pineapple rum drink for summer and works well for brunch, Mother’s Day, or any party!
Pineapple Rum Drinks
Nothing brings me back to a sense of rest and vacation more than a tropical cocktail. Pineapple drinks, along with coconut and guava, are my go-to when I want to get away from the day to day hustle.
Sometimes the tropical fruity drinks can have a lot of sugar or be overly sweet so I wanted to create a pineapple punch that was toned down on the sugar side and bring in some other flavors.
Cucumber goes well with pineapple so I combine the two in this bright and refreshing pineapple cucumber rum punch.
There are a lot of rum punch recipes out there but this one is different. I use fresh pineapple, cucumber, and some celery to round it out. Blending the fresh produce instead of using canned or bottled juices keeps in more of the vitamins and fiber and less added refined sugar.
Really any fruits and vegetables can be used to make a rum punch. The recipe is simple. Chill your juices, add your rum of choice, and garnish with ice cubes and fresh fruits and even herbs!
The ratio of rum to juice is your totally your preference, but if you are not sure, start small and then add a little more while tasting as you go! You will find the right blend for you and your guests.

Ingredients Needed
Pineapple – Use fresh pineapple or pineapple chunks.
Celery – For a smoother punch, remove the strings from the celery.
Cucumber – I like to use an English cucumber as the peel is easy to eat. If you use a regular cucumber, I suggest peeling it.
Rum – Use your favorite rum!
Limeade – Here is a great recipe for homemade limeade made with honey. Otherwise, use your favorite limeade.
Sparkling Water – I love pineapple or cucumber sparkling water.

How to make Pineapple Rum Punch
First: In a blender, combine pineapple, cucumber, and celery. Add water and blend until fully broken down. Let sit in fridge for 10 minutes to settle.
Second: Skim foam from top and add to pitcher or store in fridge up to 3 days. This makes approximately 4.5 cups of juice.
Third: When ready to serve the punch, add limeade and rum to the juices. If it is too strong, dilute out with sparkling water to your liking.
Fourth: Serve with garnish ice cubes. Enjoy responsibly!

Do I have to use fresh pineapple?
I prefer it but I know that it is not always possible. Feel free to use pineapple juice. You might even find some cucumber and celery juice already made in your produce section:)
Can I make this ahead of time?
Sure can! I wouldn’t make it more than 2 days in advance and I would leave the rum out until ready to serve.
There is a lot of foam when I blend the pineapple, how do I fix it?
Fresh pineapple will foam when you blend it so let the juice chill in the fridge and then skim it off. It won’t hurt if you leave it in there too:)
Can I use another spirit other than rum?
Yes! I prefer rum with this but feel free to use tequila or vodka too!

To make this punch even more “extra,” garnish with fancy ice cubes. I use a silicone mold like this one to make ice cubes out of sparkling water and include slices of pineapple and cucumber.
These are not only fun for punch but think about adding them to your regular water or iced tea!

Ingredients
- 1 large Pineapple appx 6 cups
- 1 medium Cucumber if English cucumber you can leave peel on, if not peel first
- 6 stalks Celery trimmed and cleaned
- 2 cups water
- 2 cups white rum
- 1/2 cup limeade
- Lime Sparkling Water
- Pineapple and cucumber slices for garnish
Instructions
Make garnished sparkling water ice cubes
- In an ice cube mold, add a slice of pineapple and cucumber and fill with sparkling water.
- Freeze until ready to serve.
Make the Pineapple Cucumber Rum Punch
- In a blender, combine pineapple, cucumber, and celery.
- Add water and blend until fully broken down.
- Let sit in fridge for 10 minutes to settle.
- Skim foam from top and add to pitcher or store in fridge up to 3 days.
- This makes approximately 4.5 cups of juice.
- When ready to serve Pineapple Cucumber Rum Punch
- To the juice, add limeade and rum.
- If it is too strong, dilute out with sparkling water to your liking.
- Serve with garnish ice cubes.
