What is Buffalo Sauce?
With origins in Buffalo, NY, this iconic sauce is best known for coating the most delicious chicken wings ever!
Is it a hot sauce?
Not to be confused with plain hot sauce, which is just one ingredient in the full recipe, buffalo sauce has a few more flavors added to it. For a new twist on hot sauce, try this fermented hot sauce!
What flavor is buffalo sauce?
It is a medium heat spicy sauce with a savory cayenne pepper flavor. Balanced and delicious!

Ingredients Needed
Butter: I would use good quality butter as it has less water and more cream in it which will help it stick to your wings better.
Hot Sauce: You can use just about any hot sauce out there but the BEST is Frank’s Hot Sauce brand. Not sure why, but it has the perfect blend of hot peppers and vinegar without all the heat.
Spices: I like to use garlic powder and onion powder but feel free to add your favorite. Celery salt is great in this recipe. Add some cayenne if you want to up the heat level.
Worcestershire Sauce: This adds depth and a little smoky flavor. Feel free to leave it out if you prefer.

How to make Buffalo Sauce from Scratch
First: Melt the butter in a medium sized bowl.
Second: Pour in the hot sauce and stir to combine.
Third: Add in the spices and Worcestershire sauce and stir to fully combine. Store until ready to use.

How long does it last?
Once you combine all the ingredients, store it in an airtight container in the refrigerator for up to 1 month. That’s right! It’s good for a while but I guarantee that you will eat it all before then.
If the sauce becomes thick from being kept cold, just reheat in the microwave or small saucepan until the consistency is right.
Can you freeze it?
Yes, you can! Stored in an air tight, freezer safe container it will be good for 6 months in the freezer!
Store it in smaller portions to make it easier to enjoy it a little at a time.
How do you get wing sauce to stick to wings?
That’s the best part of making homemade buffalo sauce. The butter is what helps the sauce to cling to any food you dip in it!
Variations
- This recipe is mild. to get medium heat, add 1/4 teaspoon cayenne pepper with the spices.
- Some like to use a secret ingredient like white vinegar to make it more tangy, but I prefer to leave mine out.
- Mix equal parts ranch dressing and buffalo sauce to make a delicious dressing for a salad.
- Pour it on shredded chicken for quick sliders.
- Mix in some blue cheese to get the full range of chicken wing flavors.

This came at just the right time… its pouring here, and I needed sauce for the wings tonight- So quick to make and dang it… I cant stay out of it! Its so good!
