Shamrock Rice Krispie Treats

These shamrock Rice Krispie treats are a fun festive St. Patrick’s Day no-bake treat you can make at home.

This is a homemade rice Krispies treat that is buttery, crunchy, sweet, and naturally gluten free!

If you have not made homemade Rice Krispies before with white chocolate, you have to!

Add on the St. Patrick’s Day sprinkles, and you have a colorful crave-worthy sweetness. These Rice Krispies treats are made in the microwave to make them even easier!

My other favorite marshmallow treats are these Fruity Pebbles Treats, Almond Joy Krispie Treats, and these Monster Treats.

Ingredients Needed

Cereal – Plain Rice Krispies cereal. Great because they are gluten free!

Marshmallows – I like the mini marshmallows as they are easier to melt and handle.

Chocolate – White chocolate is best here! Substitute almond bark candy coating.

Staples – Unsalted butter, assorted sprinkles.

How to Make Shamrock Rice Krispie Treats

First: Melt the butter and marshmallows in a large bowl in the microwave. Stir until completely melted and smooth.

Second: Add in the rice cereal and stir quickly to coat the cereal as evenly as possible.

Third: Press into a 9×13 baking pan sprayed with nonstick spray and let set up.

Fourth: Melt chocolate in the microwave and when runny, drizzle over the bars and add the sprinkles. Let set until firm. Cut with shamrock cookie cutter.

How do you spread them in a pan without making a mess?

I have found spraying a little cooking spray on a rubber spatula or hands and press down on the treats helps to get them set into the pan without being a marshmallow mess.

You don’t need a ton, just enough to prevent sticking to the spoon or your hands.

You can also cover the top with a sheet of wax paper, lightly sprayed with nonstick spray, and press mixture down. Just don’t pack them too tight!

Why do my rice krispie treats get hard?

You want to make sure not to overcook your marshmallows. As soon as they get melted, you will then stir and pour in the cereal.

If you overcook the marshmallows, it can cause the treats to get harder in texture.

They can also get hard if you don’t store them properly in an airtight container at room temperature.

Do you put them in the fridge?

You do not need to store these treats in the refrigerator. Now, if you are in a hurry and want to set the chocolate up fast, you are more than welcome to toss it in the fridge to set up.

Just remove them as soon as it’s set.

I love keeping these treats at room temperature because they are soft, gooey, and crispy. This is the best Rice Krispie treats I have made, and we always reach for this recipe. 

Skip the sprinkles or change them up for any holiday that is coming up. 

Can you warm them up?

If you didn’t know, some people enjoy heating their rice treats in the microwave. This helps to soften up a treat to soften it if you find the treats harden a bit. This creates the perfect texture that is soft, gooey, and finger-licking good. 

Just heat for 5-10 seconds. You need to be cautious with the white chocolate on top, as it will melt the chocolate.

How do you cut rice krispie treats neatly?

Using a large knife or pizza cutter is a great way to get that perfectly cut sweet treat! Spraying the knife with nonstick spray will keep them from sticking to the knife while you cut.

You can remove them from the pan for a smoother cut as well.

When do you cut them?

You want to wait for the Rice Krispies to set up a bit before you cut into them. The reason is they will kind of fall apart a bit if the mixture has not fully set up.

Tapas Tips & Tricks

  • be sure to use a large microwave safe bowl as the marshmallows will expand and you need plenty of room to stir in the cereal.
  • for easier mixing heat the butter alone in the bowl until it is completely melted. Then add the marshmallows and stir. Microwave as directed.
  • microwave the marshmallows and butter and stir until smooth. You don’t want any marshmallow chunks before adding the cereal.
  • store in an airtight container to keep them from getting hard.
  • for a richer flavor, add in a teaspoon of vanilla extract after you stir the butter and marshmallow until smooth.
  • rice cereal is naturally gluten free, just be sure to check the ingredient labels to make sure!

Ingredients

  • 3 tablespoons butter
  • 10 ounces marshmallows
  • 6 cups rice krispies cereal
  • 4 ounces white chocolate
  • 2 tablespoons festive sprinkles

Instructions

  • In a large sized, microwave safe, mixing bowl mix the butter and marshmallows.
  • Microwave at 30 second intervals until the butter is melted and the marshmallows are soft. They will puff up really big so make sure your bowl is large!
  • Stir to combine the butter and marshmallows into a slurry.
  • Pour in the cereal.
  • Quickly stir to coat the cereal evenly.
  • Press into a 9×13 pan sprayed with cooking spray.
  • Let them set while you melt the chocolate.
  • Melt the chocolate in a small bowl in the microwave at 15 second intervals until melty and creamy.
  • Drizzle over the rice krispie treats.
  • Sprinkle with shamrock sprinkles.
  • Let set at room temperature until the chocolate has hardened.
  • Cut and serve.
