Sausage squares or balls are a favorite southern snack of mine. They are hearty, spicy, and so easy to make.
Plus I love how super easy they are to serve. A few toothpicks (or use your fingers like me) and a few of you favorite dipping sauces and you are good to go!
I wanted to mix them up a bit from the traditional spicy sausage balls with cream cheese recipe and give them an extra kick. Mixing some creamy pimento cheese spread with the sausage is just what I was looking for.
With minimal prep and maximum flavor these little balls of goodness are AMAZING! You can even try them with chicken like these chicken sausage rolls.
Whip up a large batch of these sausage cheese balls for any gathering from breakfast to a midnight snack. They are the best finger food for any occasion.

Ingredients Needed
Pork Sausage – I like to use hot pork sausage but use your favorite.
Prepared Pimiento Cheese – Grab a tub of your favorite (I like Palmetto cheese) or make you own homemade pimento cheese.
Bisquick Original Pancake Mix – Any complete baking mix will work. Or make a homemade Bisquick substitute.

How to Make Sausage Balls with Pimento Cheese
First: Preheat oven to 375F. Prepare a cookie sheet with parchment paper or baking mat.
Second: In a large mixing bowl using a hand mixer, or a stand mixer, combine the sausage, baking mix, and pimento cheese. Mix until combined but do not over mix.
Third: Form into 1-inch balls. Bake for 15-20 minutes or until light golden brown and firm.
Fourth: Remove and let cool slightly.

Can I make these ahead of time?
You can prep and bake these up to 3 days in advance. Store in an airtight container in the fridge.
Reheat in a 350F oven for 10-15 minutes or until warmed through.
Can I freeze them?
Yes, you can! Prepare the sausage balls as usual and cool completely. Freeze on a baking sheet and then store in a ziptop bag for up to 2 months.
Thaw frozen sausage balls overnight in the fridge before reheating.
Can I make them in the air fryer?
Totally! Preheat to 360F. Bake in batches for 8-10 minutes or until cooked through.
Tapas Tips & Tricks
- Use a greased baking sheet or line with parchment paper or aluminum foil for easy clean up.
- If you don’t have pimento cheese, you can just add shredded cheddar cheese, cream cheese, and chopped pimentos.
- Bring the sausage close to room temperature for more even mixing.
- Spread the mixture in crescent roll dough and make these sausage crescents!
- I prefer homemade pimento cheese but if you want to skip that part, Palmetto brand (12-ounce tubs) is my favorite.
- Use a cookie scoop to make the inch size balls and to keep them all the same size for even baking.
- This recipe starts with uncooked sausage so bake until the internal temperature is 165F.
