The holiday hustle and bustle can make entertaining seem daunting. But I want to share the easiest appetizer recipe that is sure to impress. Bake Brie in Puff Pastry! Or the fancy name, Brie En Croute.
This dish, full of gooey melted cheese, is flavorful and festive. It balances the sweet and salty oozy, melted cheese center with some flaky pastry and fruit and nuts.
You don’t need fancy ingredients or skills to make this crowd-pleaser. Whether served solo or part of a festive charcuterie spread, this show-stopper shows everyone the amazing host you are.

What Is Brie Cheese?
Brie is a smooth, rich cheese with origins in France that has become popular worldwide. This cheese features a soft edible rind surrounding a tangy and creamy inside.
Traditionally made using cow’s milk, goat milk versions are available. Its versatile flavor and texture make brie an delicious partner to so many things.
Baked Brie is amazing with Jam, or try baked brie with a simple drizzle of honey!

Ingredients Needed
Brie – A standard 8 ounce wheel of Brie cheese. Substitute Camembert if desired.
Puff pastry – Use store-bought puff pastry or substitute crescent roll dough or phyllo dough.
Jam – Your favorite fruit jam. Raspberry jam is my favorite!
Brown sugar – Light brown sugar or substitute dark brown.
Nuts – Toasted pecans or Almonds.
Serving – Crackers, grapes, apples, and bread slices for serving
Kitchen staples – Large egg, fresh herbs like fresh rosemary or thyme.

How to Make Baked Brie in Puff Pastry
First: Preheat the oven to 350 F. Unwrap the round of brie and cut the top of the wheel off to expose the cheese inside.
Second: Roll out the puff pastry slightly. Place the brie in the center of the puff pastry.
Third: Cover the top of the cheese. with the jam. Carefully wrap the puff pastry dough up and over the brie.
Fourth: Place in an oven safe baking dish. Brush top of the pastry with the beaten egg wash. Sprinkle it with brown sugar and nuts.
Fifth: Place the fresh herbs around the cheese. Bake for 35-40 minutes or until the puff pastry is golden brown.
Sixth: Remove and place on a serving tray. Let cool for 5-10 minutes or the cheese will be very hot.
Garnish with fresh herbs. Serve with crackers, grapes, apples, and bread slices.

How long does it last?
You can store any uneaten brie in an airtight container in the refrigerator for up to 4 days.
Reheat it either in the oven or microwave, using short intervals until it becomes warm, melted cheese again.
Do you remove the rind from brie cheese before baking?
The brie rind is perfectly fine to eat, but if you prefer not to have it, you can remove it. It’s really a matter of personal preference.
If you want to remove it, trim the top portion of the cheese while leaving the sides and bottom intact to prevent the cheese from spreading too much in the dish.
What jam goes best with brie cheese?
I personally recommend a tart or sour jam like raspberry or cherry, but feel free to use a sweet jam such as fig jam or apricot jam.
Really, any flavor of jam or fruit spread that you enjoy will work. Cranberry jam or sauce is perfect for the holiday!
If you like a it of heat, try pepper jelly or red pepper flakes.
Do you have to bake brie before eating?
Usually, I bake brie to make it warm and gooey, which is perfect for spreading on crackers.
However, you can also serve it cold. Slicing it and placing it on sandwiches is one of my favorite ways to enjoy it. It also makes a great grilled cheese!
Try it in phyllo cups for a bite size appetizer that is easy to dress up. Raspberry Brie Cups & Apricot Brie Cups.
Tapas Tips & Tricks
- If using a smaller dish, try lining it with parchment paper to make it easier to transfer to a serving platter. A small cast iron skillet works well too.
- Try either a full wheel of brie or a smaller wedge, depending on your preference.
- Before baking, allow the brie to reach room temperature.
- Leave the top of the brie intact and simply make hashmarks on it using a sharp knife.
- If you prefer a savory twist, consider serving it with toppings like tomato bacon jam or caramelized onions.
- Garnish with herbs like fresh thyme.
- Use any excess dough to make shapes with a cookie cutter and decorate the outside of the pastry.
- Substitute crescent roll dough, or phyllo dough for the sheet of puff pastry.
