I love just about anything with bacon and cream cheese in it but when you throw in some chicken and cheese and roll it up in a tender tortilla, I am totally hooked.

Not only are they great to serve at a party, enjoy them as a light lunch or a fun after school snack the kids will love. Make them in the morning and slice and serve when ready.

Ingredients for Chicken Pinwheels

Chicken – Precooked chicken breasts are a time saver for sure. If you don’t have any one hand, grab a rotisserie chicken from the deli or even use canned chicken for easy prep.

Cream Cheese – Feel free to use a reduced fat or fat free version. Be sure to bring it to room temperature before mixing.

Cheese – I used a shredded cheddar mix but feel free to use your favorite.

Bacon – Precooked bacon is perfect for this or even bacon bits. Just be sure it is real bacon and not bacon flavored bits.

Ranch Seasoning – This is the dry seasoning mix found in the condiment aisle. You can also use the fiesta or buttermilk flavored mixes.

Tortillas – Use a large 10-inch size flour tortilla. You can use low carb versions if you prefer.

How to make Crack Chicken Pinwheels

First: Add the softened cream cheese, shredded cheese, Ranch dressing mix, and milk in a large bowl. Stir to combine.

Second: Add in the shredded chicken, chopped bacon, and green onions. Fold gently to combine. Be careful not to over mix and break up the chicken.

Third: Divide the mixture between 4 large (10 inch) flour tortillas. Spread in an even layer being sure to get close to the edges.

Fourth: Roll them up tight and wrap in plastic wrap. Chill for 30 minutes to 1 hour to let them firm up.

Fifth: When ready to serve, unwrap from the plastic. Using a sharp knife, slice into 8 pieces, trimming off the ends where the filling and tortilla are uneven. Serve immediately.

How far in advance can you make Pinwheels?

You can make these in advance and store them in the refrigerator for up to 24 hours. I suggest wrapping them tightly in plastic wrap. Do not slice them until ready to serve.

Can you freeze Crack Chicken Pinwheels?

I do not recommend freezing them. Cream cheese looses it’s consistency and lead to soggy pinwheels with a chalky texture.

Do Pinwheels need to be refrigerated?

Because they have cream cheese in them, they need to be stored in the refrigerator. You can keep leftovers in an airtight container in the fridge for up to 3 days.

How do you keep Pinwheels from getting soggy?

Be sure to drain any wet ingredients you have really well before placing in the roll ups. Or you can create a moisture barrier with cream cheese or mayo to protect the tortilla.

Be sure to wrap them tightly in plastic wrap when storing.

How do you cut tortilla pinwheels?

Chilling the pinwheels will allow the cream cheese mixture to firm up so be sure to let them set in the fridge at least 30 minutes before slicing. 1 hour is better!

When ready to slice, use a very sharp or serrated knife. Hold the tortillas gently and use a back and forth motion to move the knife through the pinwheel.

If the knife gets coated with the cream cheese mixture, wipe it clean before making the next cut.

  1. Being from the UK we don’t have ranch seasoning as a go-to…is there something else you could recommend that would work equally well?

    1. You can use a simple mixture of 2 teaspoons dill, 2 teaspoons garlic powder, 1 teaspoon onion powder, and 1 teaspoon oregano. Or if you have a comparable salad dressing mixture. I like a plain italian dressing mixture. I hope this helps!
