I’ve got a great dessert recipe to share with you guys today – a simple dessert with classic flavors, that is not only perfect to celebrate the season, but it’s perfect for any gathering, like Super bowl or March Madness parties!

These No-bake Chocolate Bourbon Cheesecake Bites are delicious and great for any kind of party and for entertaining too.

You could call these chocolate bourbon cheese balls or chocolate cheesecake truffles too if you like.

Regardless, these are decadent and addictive, and you can make these either as individual truffles, OR make it as one large dessert cheese ball and serve it with cookies.

You can adapt this recipe depending on how easily you want to prepare it. I’ll be sharing instructions in the recipe on how to make this as one large chocolate cheese ball or as individual no-bake chocolate cheesecake bites!

No Bake Cheesecake Bites

Personally, I prefer serving these as individual no bake chocolate cheesecake bites because then there’s more crushed oreos covering each bite, and also that way I don’t have to share! 🙂

You can use either one of two ways to make the cheesecake truffles.

One – use a cookie scoop to portion and then shape them into balls using a piece of plastic wrap (you don’t want to use your hands because they can be quite soft and sticky).

Two – place the whole mix in a piping bag and pipe out individual portions. Piping method is easier and less messy.

These no-bake chocolate cheesecake bites make the perfect bite-sized treat for casual parties and cocktail parties. So they pair perfectly with coffee or cocktails too.

The cheesecake truffles are flavored with bittersweet chocolate, so they have a nice balance of sweet and deep chocolate bitterness. Plus, that boozy kick you get from the bourbon is really fun too! 🙂

I’ve coated these cheesecake bites with crushed oreos here, but you can use whatever you like. Chopped nuts, desiccated coconut, crushed graham crackers, or even melted chocolate are all great choices.

These no bake chocolate cheesecake bites can keep in the fridge for a couple of days, so it’s perfect to make ahead too! Just make sure you don’t eat it all by yourself 😉

Ingredients

  • 12 oz cream cheese softened
  • 4 oz bittersweet chocolate melted
  • 3 tbsp bourbon
  • Pinch of salt
  • 1/4 cup sifted confectioner’s sugar
  • Crushed Oreos

Instructions

  • Mix the chocolate, bourbon, and salt together to form a smooth mix.
  • Add the cream cheese and confectioner’s sugar and whisk/mix until everything is mixed through and fluffy.

Scoop Method

  • Cover the cream cheese mixture and refrigerate for a few hours until the mix is chilled.
  • Using a small cookie scoop, scoop out a portion of the cream cheese and place it on a piece of plastic wrap.
  • Wrap the plastic wrap around the cream cheese to form a mini ball.
  • Repeat with the rest of the mix.
  • Place the mini balls in the crushed Oreos and coat each ball well.
  • Place the coated mini cheesecake bites on a plate, cover with plastic wrap and chill until needed.
  • Stick toothpicks in the balls before serving for easy presentation.

Piping Method

  • Place the cream cheese chocolate mix in a large piping bag.
  • Line a cookie tray with parchment paper.
  • Cut a 1/2 inch hole in the piping bag and smoothly pipe out 1 1/2 inch large mounds of the cheesecake mix on the lined cookie tray.
  • Cover and refrigerate the tray for a few hours until the cheesecake balls are firm.
  • Place the firm cheesecake balls in the crushed Oreos.
  • Roll them in the crushed Oreos to coat generously and to form a smooth ball.
  • Place the coated mini cheesecake bites on a plate, cover with plastic wrap and chill until needed.
  • Stick toothpicks in the balls before serving for easy presentation.

To serve as one large dessert cheese ball

  • Cover the cream cheese mixture and refrigerate for a few hours until the mix has chilled well.
  • Form a large double layer of plastic wrap on your work surface.
  • When the cream cheese mixture has been chilled, scrape the whole mix onto the plastic wrap.
  • Gather the edges of the plastic wrap around the mix and twist to form a large smooth ball. If the cheese softens too much, wrap and refrigerate so that it firms up again.
  • Unwrap the cheese ball and coat it all over with crushed Oreos.
  • Place the coated cheese ball on a serving plate, cover and chill until needed. Serve with cookies.
