Ingredients
12
eggs
hard boiled & peeled
1/3
cup
mayonnaise
1
tablespoon
butter
2
teaspoons
yellow mustard
2
teaspoons
Dijon mustard
2
teaspoons
sweet pickle juice
I like the sweet gherkins
1
teaspoon
sugar
Dash of hot sauce
Salt and pepper to taste
Paprika
pickle slices, and cooked bacon for garnish
Instructions
Slice eggs in half and remove yolks to another bowl. Place egg white halves on serving platter.
Combine cooked yolks in a large bowl with mayo, butter, both mustards, pickle juice, sugar, and hot sauce.
Mix to combine. Make as creamy as you like.
Place in a plastic bag or piping bag.
Stuff in the egg white halves with filling.
Garnish with paprika, pickle slices, and bacon pieces.
Serve.
Notes
For a better looking presentation on this classic recipe, use a piping bag or pastry bag to stuff your prepared filling into your egg whites.
Replace teaspoons dijon mustard with yellow mustard.
I like to mash my yolks first before adding the remaining ingredients to get the texture I want.
Use leftovers to make egg salad.
Perfect for serving with a Bloody Mary!
Pro tip - for a creamier filling, replace mayo in this recipe with room temperature cream cheese.
For a smoother filling, combine filling mixture in a food processor.
