Ingredients

hot breakfast sausage
2
cups
Bisquick cooking mix
12
ounces
pimento cheese
Instructions
Preheat oven to 375F. Prepare a baking sheet with parchment paper or baking mat.
In a large bowl using a hand mixer, or a stand mixer, combine the sausage, baking mix, and pimento cheese.
Mix until combined but do not over mix.
Form into 1 inch balls.
Bake for 15-20 minutes or until light golden brown and firm. (Internal temp should be 165)
Remove and let cool slightly.
Notes
Use a greased baking sheet or line with parchment paper or aluminum foil for easy clean up.
If you don't have pimento cheese, you can just add shredded cheddar cheese, cream cheese, and chopped pimentos.
Bring the sausage close to room temperature for more even mixing.
I prefer homemade pimento cheese but if you want to skip that part, Palmetto brand (12-ounce tubs) is my favorite.
Use a cookie scoop to make the inch size balls and to keep them all the same size for even baking.
This recipe starts with uncooked sausage so bake until the internal temperature is 165F.
