Ingredients

Velveeta
diced or in large chunks

10.5 ounce can Rotel, not drained
8
ounces
hot pork sausage
ground or crumbled

salad shrimp
roughly 9-10 ounces
Instructions
In a large skillet brown the sausage until no longer pink. Drain.
Place the remaining ingredients in a crock pot.
Cook on high for 2 hours or on low for 3-4 hours. Stirring occasionally.
Reduce heat to warm. Serve with tortilla chips.
Notes
Substitute ground turkey or ground beef for the sausage.
Be sure to use raw salad shrimp. If they are cooked before adding they will become tough.
Stir in some
taco seasoning
,
Cajun seasoning
, ground cumin, or red pepper flakes for a little kick!
Substitute a mixture of cream cheese and fresh grated cheddar cheese for the Velveeta.
Make it spicier by using pickled or fresh jalapeno peppers instead of green chiles.
Sprinkle in garlic powder for extra kick.
For a more tangy dip, stir in sour cream right before serving.
