Ingredients
4
cups
white corn
frozen, golden is fine too
1
jalapeño
seeded, chopped fine
8
ounces
cream cheese
softened
1/2
teaspoon
garlic powder
1/2
cup
green onion
sliced thin
1/2
cup
milk
1
teaspoon
salt
1
teaspoon
pepper
sliced green onion for garnish
chips for serving
Instructions
Mix all the ingredient, minus the garnish in a crock pot.
Cook on high for 1 hour.
Stir and cook for another 30 minutes on high.
Stir and serve warm!
Notes
Corn:
Use frozen, canned, or fresh corn. For more flavor try Mexicorn!
Cheese:
Mix in some cheddar cheese or pepper jack cheese at the end. You can't have it cheesy enough.
Heat:
Add more jalapeno or even try pickled jalapeno peppers. I like a roasted poblano myself. A dash of hot sauce will work well too.
Flavors:
Add in some chopped green chiles, black beans, chopped chipotle, and roasted red peppers for more color and flavor.
Spices:
If you like a little smoky flavor, add some chipotle chili powder.
